Cutting the serpentine
If you wish to have a number of separate types of brandy, the collection basin is removed and is replaced with a new one when brandy starts to flow out; it's worth to saying, in more specific terms, when brandy drips a second time. This procedure is called cutting the serpentine. The second brandy is placed aside and it forms a residue or "acquavite flemmatica", which cannot be put on the market.
