Poli Distillerie
Artisan distillery founded in 1898 in Schiavon Vicentino by Titta Poli, succeded by Giobatta, Tony and Jacopo. A very high quality Grappa is produced with passion. They exclusively distill the freshest and healthiest grape pomace originating from the best producers of the area in order to obtain a grappa characterized by a desire to balance character and elegance, because as Jacopo Poli often says: "The secret of distilling a good Grappa is simple: all that is needed is fresh grape pomace and 100 years' experience". The steam still of Poli Distilleries is one of the oldest functioning: it is entirely made of copper as in old times. The grape pomace is heated with steam and the working cycle is discontinuous : we load the boiler with the grape pomace and distill it (we then do what is called "cotta" - cooking).
