Grappa-flavoured chocolate minicakes


Bring the milk to a boil in a saucepan. In the meantime and in another saucepan, melt the butter, add the flour and toast is on low heat. Drizzle the hot milk into the second saucepan, whisk it constantly, make sure no clumps are made when pouring the milk.
Remove from heat, add the vanilla sugar, the egg yolks and grated chocolate. Set aside to cool. Whisk the egg whites with the sugar to obtain a foam, then add this foam to the saucepan.
Grease the moulds with some butter, drizzle some sugar on the moulds, fill them with the chocolate cream leaving some room on the top.
Move the moulds to the oven, bake with a water bath for 20 minutes at 180°. Serve these minicakes not too hot, drizzling them with some flavoured Grappa.
