Trout fillets with lemon and Grappa

Preparing:

Take the fillets, place them in a saucepan and pour over it plenty of Grappa, leaving them to soak in this  marinade for about 40 minutes.
Then take the fillets, drain them and coat them with rock salt.
Remove both salt and Grappa, and cover the fillets with lemon juice, then letting it rest in the refrigerator overnight.
Serve the fillets filleted and cold, flavored  with a drizzle of extra virgin olive oil and chopped parsley.
You may decorate with a few sprigs of parsley.
We recommend to consume the dish the next day.
