Soup of Bianchetti (Italian whitebait) with Grappa

Ingredients:

500 g Bianchetti (Italian whitebait)
300 g ripe tomatoes
1 small onion
1 rib of celery
Half glass olive oil
Half shot aged Grappa
Salt q.s.

Preparation:

Prepare a broth made up  of tomatoes, celery and onion, with the addition of olive oil and salt.
Wash the Bianchetti thoroughly, add them to the broth.
When the broth has reduced, add the Grappa  immediately.
