Shrimp cocktail sauce
Preparing:
Boil the prawn tails in salted boiling water and peel them.
Make a mayonnaise with two egg yolks, olive oil and lemon juice, add about a tablespoon tomato ketchup, enough to make it pink, ,and a hint of aged Grappa.
Take an oval platter and spread a thin layer of sauce on the bottom, placing the tails in good order. The dish is ready.
